Endive for rabbit – in

Endive with its little bitterness is in general, very appreciated by rabbits.
It is a food that can be frequently part of the daily selection of vegetables.

Origin of endive – in

Endive is a relatively recent vegetable, “discovered” in Belgium around 1850 by a farmer. At first it was a wild, bitter chicory, inedible for humans. The farmer realized that when put in the shade and warm, it whitened and softened, it became endive or chicon in Belgian. The undergrounds of the botanical gardens of Brussels became the first places of culture of the endive that we know today.
The culture is done today in 2 steps of chicory with big roots are first put in ground in the open air, then transplanted in wet cellars to finish their development.

In French we say endive, chicon in Belgian, and Witloof in Flemish. The English keep the original term Chicory or also Endive which can be used.
