Cardon pour lapin

Mostly cultivated in the Mediterranean basin, cardoon, also called artichoke thistle, belongs to the Asteraceae family (like artichoke and Jerusalem artichoke). It is in the same family as chard.

Only its stems, removed from their spines and carefully washed, are edible.

However, be careful to give it only occasionally and in small quantities, as its high fiber content can easily cause bloating and other intestinal gases. Avoid for rabbits with digestive problems.
